Mango Lassi

Our neighbors brought a handful of mangoes over the other day, and I was wondering what we could do with them since they were almost overripe and wouldn’t last even a few days. Besides smoothies or mango salsa. My sister just got back from India and was telling me of this wonderful drink she had there called “Lassi”. On further research I found that it is a popular drink here in Southeast Asia, but most common to Northern India. Found plenty of recipes for mango lassi on the web, and here is one we liked:

2 cups fresh mango, peeled and stone removed

2 cups plain yogurt

1 c. milk

1/4 c. honey, more to taste

2 Tbsp. lime juice

tiny pinch of salt

Throw everything in the blender and puree for 2 minutes. Chill. Pour over ice cubes and serve.

Leftovers can be stored in the fridge for 24 hours. Also really good with crushed pistachio nuts sprinkled on top if you have.

 A healthy, refreshing drink on a hot summer afternoon!

    I want to try this recipe. Lots of little shops sell just a plain lassi here, but I’ve never seen a mango one. We’re also have such fun w/ fresh mangos right now!!
